At our mill, we process high-quality ancient Sicilian grains, stone-milled to preserve their flavor and nutritional properties. We offer a selection of premium flours, including Bidì, Russello, Perciasacchi, and Senatore Cappelli, perfect for making bread, pizza, fresh pasta, and artisanal pastries. We also produce soft wheat flours like Maiorca and Romano, ideal for traditional sweets, and special flours such as chickpea flour, suitable for gluten-free recipes. Our artisanal pasta, bronze-drawn and slowly dried, is made from ancient grains and includes traditional Sicilian shapes like Busiata Trapanese and Casereccia di Timilia, enhancing the authentic taste of our heritage.
